About This Coffee: Originating from the foggy mountains of Myanmar, Shan comes from the remote villages of Pao, located between 1340 to 1620 meters above sea level. This region is rich in crops, with local farmers growing not only coffee but also avocados, oranges, tea, and rice. Shan coffee is processed using the unique anaerobic drying method, a technique that enhances the coffee’s distinctive fruity character.
The cherries are placed in an oxygen-free environment for fermentation, allowing them to develop rich, complex flavors. After 42 hours of fermentation, the beans are dried on raised beds for 18 to 23 days, where they soak in the pure mountain air. This process, combined with the altitude, produces a coffee with an exceptional fruity profile.
Shan is a delightful combination of flavors, with hints of ripe peach, sweet cherries, and tropical pineapple, making it perfect for milk-based beverages or pour-over coffee.
