For the first time at Soil Roastery, we proudly present this exceptional Thai coffee, sourced from the lush Khun Lao village in the mountainous, tropical region of Chiang Rai. Grown at an altitude of 1,400 meters, this unique lot comes from the Chiang Mai cultivar, a local hybrid of SL28 × Caturra × Hybrido de Timor—placing it within the Catimor family (like Colombia and Castillo), but enhanced by SL28 for superior cup quality.
This cultivar is highly resistant to coffee leaf rust and was part of a royal initiative to replace opium cultivation with sustainable coffee farming.
Processing Innovation
This coffee underwent anaerobic fermentation, sealed in bags submerged in water to maintain low temperatures and prevent unwanted microbial activity. After three days, the beans were dried on raised beds, then moved to a sealed drying room and finished using a low-temp, low-humidity dehydration technique—a locally developed Thai innovation designed to combat climate volatility and preserve cup quality during a particularly rainy harvest season.
